Andy's Peach Green Chile

The Story of the Dish...

Being from New Mexico and loving everything about New Mexican food and whenever possible adding green chile to anything, here is a peach, green chile recipe worth trying!

The Recipe...

Ingredients:

    • 4 or 6 peaches, halved, pitted, sliced
    • 2 roasted green chiles (diced) (Hatch preferred) if already diced, use about ¼ cup
    • 1 teaspoon cornstarch
    • ¾ cup brown sugar
    • ¾ teaspoon ground cinnamon
    • 1 stick of unsalted butter
    • 1 cup flour
    • ½ cup sugar
    • 2 teaspoon baking powder
    • ½ teaspoon salt
    • 1 cup of milk

Directions:

Step 1:  Preheat oven to 400 degrees. In large bowl, combine peaches, chile, cornstarch, brown sugar, cinnamon. Stir till evenly combined

Step 2: Melt butter in small pot and then pour into bottom of 8×8 or 9×9 baking pan. Mix together the flour, sugar, baking powder, salt; once mixed gradually pour in the milk until the combination of ingredients are thoroughly mixed but not over mixed. Pout this batter on top of the melted butter.

Step 3: Put the peach/chile mixture on top of the batter. Bake in the oven for 35 to 45 minutes, or until batter is puffed up and done in the center. If edges or top get too brown before fully baked, then cover w/ foil.

Step 4: Serve w/ whipped cream or vanilla ice cream.
