Kevin's "Don't Tell My Wife I'm Eating These" - Grilled Peaches
The Story of the Dish...
These are so very good and once of my favorite summer time treats. This recipe is fantastic for a big back yard barbecue and can be for just a few people.
Chances are you’ve had some pretty fantastic desserts this summer, butI would put my peach recipe up against all of them.
Peach Pro-Tip: Wait until the peaches are just a little past ripe (think September) – the sugars caramelize nicely and I think there is just another level of flavor there.
The Recipe...
Ingredients:
1 stick unsalted butter, at room temperature
1 teaspoon cinnamon sugar
2 tablespoons granulated sugar
Pinch salt
4 ripe peaches, halved and pitted
Canola oil
Mint leaves, for garnish
Directions:
Step 1: In a small bowl add the butter and stir until smooth. Add the cinnamon sugar, granulated sugar and salt and mix until combined.
Step 2: Heat grill to high. Brush peaches with oil and grill until golden brown and just cooked through. Top each with a few teaspoons of the butter and garnish with mint leaves.
Step 3: Eat…or hide them in the fridge.
